I am not very fond of soups but this chicken soup is an exception as I love to have it with idlis, dosas, bread or even as such as it tastes so good on its own. The climate here is so chill these days and a warm bowl of soup is a bliss. Mittu loves to have this soup as such or with idlis. You can pressure cook for more whistles if its for kids to make the chicken even more soft.    Chicken Soup Recipe - Ingredients
    Serves: 2
    Cooking & Preparation Time: 20 mins

    Chicken - 300 gms
    Turmeric powder - a generous pinch
    Water - 2 cups
    To grind to a paste:
    Small Onion - 10
    Coriander leaves - 1/4 cup tightly packed
    Jeera - 1 tsp
    Peppercorns - 1/2 tsp
    To temper:
    Oil - 1.5 tsp
    Cardamom(Elachi) - 1
    Jeera - 1/2 tsp
    Curry leaves - few
    Big Onion - 1 small sized
Method:
1.First grind the ingredients listed under 'to grind to a paste' with little water to a semi fine paste.Set aside. In a pressure cooker heat oil - add cardamom and jeera let it splutter.

2.Then add onions amd curry leaves saute till it is slightly browned. Then add washed and cleaned chicken pieces, add turmeric powder. Saute for 2mins then add the paste.

3.Saute well till raw smell leaves say for 3-5mins. Then add water, required salt and pressure cook for 5 whistles. Once pressure releases, open and serve hot.

Kadai Chicken - Kadai Chicken Gravy / Curry Recipe
Kadai Chicken / Kadai Chicken Masala / Curry is one of the popular chicken recipes served at restaurants.This is a north indian delight where chicken is cooked along with freshly ground spices and distinct flavour of capsicum which is the specialty if this dish.  For vegetarians you can check out my kadai paneer recipe.

Kadai Chicken Recipe - Ingredients
Preparation Time : 15 mins | Cooking Time : 25 mins | Serves : 2

Chicken - 10 small pieces
Big Onion - 1 finely chopped
Green Capsicum - 3 tbsp chopped into bite sized pieces
Ginger Garlic paste - 1 tsp + 1/2 tsp
Turmeric powder - a generous pinch
Lemon juice - 1 tsp
Tomatoes - 2 big or pureed
Fresh Coriander leaves - 1 tbsp chopped finely
Salt - to taste
To temper:
Oil - 1 tbsp
Bayleaf - 1/2
Cloves - 2
Cardamom - 1
To roast and grind to a dry powder:
Coriander seeds - 2 tsp
Pepper corns - 1 tsp
Jeera - 1/2 tsp
Dry Red Chilli -3
Cinnamon - 1.4 inch piece
Method:
    - Step1
Dry roast the ingredients listed under 'to roast & grind' to golden brown then grind it to a semi coarse powder,Set aside.Kadai Chicken Recipe

Heat a pan  add a tsp of oil and toast capsicum until crispy(this step is purely optional)...dont let it brown, set aside. Clean chicken , wash it well then add half of roasted powder along with ginger garlic paste,salt, lemon juice turmeric powder and marinate it and set aside.Kadai Chicken Recipe

Heat a kadai / pan with oil - add the items listed under 'to temper' then add onion,ginger garlic paste let it slightly brown.Then add tomato puree along with remaining roasted powder.Kadai Chicken Recipe

Mix well and let it cook till raw smell of tomato and masalas leave.Add required salt...Then add chicken pieces and saute for 3mins until the raw texture of chicken changes.Add little water say 1/2 cup , cook covered for 10-12 mins until chicken pieces turn soft or pressure cook for 4-5 whistles.Kadai Chicken Recipe

Allow water to reduce and let oil sepearate, at this stage add toasted capsicum give a quick stir. Let it cook in medium flame for 3mins for capsicum and chicken to blend well and the masala to coat well.Finally garnish with coriander leaves and switch off.

Chicken Biryani!! Yes you read it right finally here I'm with the recipe.Sundays are special not because it creates a relaxing holiday mood but during the lunch time the corridor is filled with the aroma of biryani coming from each house which kicks the hunger in me :) Check out hotel style mutton biryani recipe.

Last year, a reader had asked me why I did not post for bakrid and ramzan - Trust me it did not strike me and also I did not have the courage to cook nonveg that time...Many readers asked for the chicken biryani recipe and finally here I am with it for Ramzan Special.I got the recipe from my perimma and tried it out....Dont hesitate seeing the long list of ingredients, the taste is worth the try :)
Chicken Biryani Recipe - Ingredients

Basmati Rice - 1 cup
Chicken - 300 gms
Onion - 1 big chopped lengthwise
Tomato 1 small sized chopped roughly
Ginger-Garlic paste - 2 tsp
Garam Masala powder - 1.5 tsp
Red Chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 2 tsp
Curd - 1 tbsp
Thin Coconut milk -1/2 cup
Water - 1 cup
Oil - 2 tbsp
Ghee - 1 tbsp
Salt - to taste
To grind to a paste:
Coriander leaves - 1/4 cup
Mint leaves - 1/4 cup loosely packed
Green Chillies - 1
Tomato - 1 big sized
To temper:
Cloves - 3
Cardamom -1
Cinnamon - 1/4 inch piece
Bayleaf -1 
Method:
    - Step1
 Soak basmati rice in water for atleast 20mins, set aside.Grind the ingredients under 'to grind' with little water to a fine paste. Set aside. Clean chicken and rinse it thrice , add turmeric powder and set aside.Chicken Biryani Recipe

Heat oil+ghee in a pressure cooker and add the items under 'to temper' then add ginger garlic paste and saute for a minute.Then add onion and saute till its golden brown. Then add tomato, saute till raw smell leaves.Chicken Biryani Recipe

 Then add coriander mint paste and saute for 2mins. Then add curd, chicken along with turmeric, red chilli,coriander,garam masala powders and required salt.Chicken Biryani Recipe

 Saute till it forms a thick gravy and chicken changes color.Add 1 cups of water and pressure cook for 4 whistles.Once pressure releases, open and give a quick stir.Chicken Biryani Recipe

Drain water from rice and add it to the gravy, stir once. Then add coconut milk.Chicken Biryani Recipe

 Pressure cook for 3 whistles(After first whistle simmer it). Once pressure releases fluff it with a fork carefully without breaking the rice. Serve hot with onion raita.Chicken Biryani Recipe.
